The tiffin room: how a South Indian restaurant works

Fast, cheap, mostly vegetarian, and busy from seven in the morning. The food is built on a fermented batter of rice and lentils, which is why it tastes faintly sour and sits lighter than it looks.

The core menu

DosaThin fermented crêpe, crisp. Plain, masala (folded over spiced potato), rava (semolina, lacier), Mysore (chilli paste inside), paper (enormous and thin)
IdliSteamed batter cakes, soft and plain. Designed to carry sambar and chutney

How the meal actually goes

First visit? Order this

One masala dosa, one plate of idli-vada to share, and a filter coffee. Total cost is usually a fraction of a North Indian meal, and it's the most reliable introduction there is.

A note on timing

These places are breakfast-and-evening institutions. Many serve tiffin (light meals) in the morning and evening, and a rice meals plate at lunch — turning up at 1pm asking for dosa sometimes gets you a polite no. Desi breakfasts covers what's being served and when.
